Me, I would have cut power from the outside and just installed a pullout on the outside of the building. I would not have messed with the fuse box at all. Would have saved a ton of time and cost maybe 20 bucks more.

I've been watching your videos for a long time now and I know you're not an idiot, I'm sure you handled the electrical feed safely, but (8:45) it's a good practice to get into pulling your hots off first and your neutral off last. I'm not sure if you did this but it's actually a very important habit to get into.
I'll give a short explanation. If you're working on something hot and pull the neutral off first, the current from the device/equipment is trying to find a path "to ground". Getting whacked by 120/240v sucks but the only amperage is the resistance of your body vs the voltage. If you pull the neutral off first you have the resistance of your body and all the amperage of the equipment. Neutraul shocks will F***k you up.
Another reason it's worth adopting this is that you're removing the neutral from a panel. If a sub panel loses its neutral, the devices on one phase of the panel are now in series (electrically) with the devices/equipment on the other phase of the panel. It will damage pretty much everything that's plugged in drawing a current.
It's a really good habit to get into, I can't tell for sure if you had the hots off already or not but it could literally save your life to get into that habit.
The rest of your content is excellent though and I learn so much from you in pretty much every video I've seen of yours.

The whole time I'm watching I am trying to figure out how the hell you are gonna do it... and even your solution surprised me. Why did he just offer the neighbor what he paid you for an easement or a chunk of the land.

Did check to see if level? With all the lumber you have, you can make a proper stand for your fork truck. Then no standing on roofs to cut branches. I'm not sure about USA, but Canada is safety first.

The shed over the property line. -- the owner was trying to sell the house, no bank would lend money because of the shed being over the property line. It was lawyers and more lawyers dotting the "i" and crossing "t", this has become common the last few years, the owners don't care, the banks care.
